Method

Make the dough by combining flour and salt, then creating a well and adding eggs and warm water. Knead thoroughly until smooth and elastic, then let rest for 30 minutes. Meanwhile, prepare the filling by mixing quark, soured cream, eggs, salt and white pepper. Roll the dough very thin on a floured surface, stretch it gently to almost transparent thickness, then brush with melted butter. Spread the cheese filling evenly over the dough, then roll it tightly into a log and coil it into a spiral. Place the spiral in a buttered baking dish, brush the top with more melted butter and soured cream, then bake at 190°C for 45-50 minutes until golden brown. Serve warm, cut into portions, with additional soured cream on the side.
