Heat oil in a large heavy-bottomed pot and sauté the onions, garlic and ginger until golden and fragrant. Add the beef cubes and cook until browned on all sides, stirring occasionally for about 8-10 minutes. Pour in the water, add salt and turmeric, then bring to a boil and reduce heat to simmer covered for 30 minutes until the beef is tender. Add the potato cubes and fresh chillies, continuing to simmer for another 15-20 minutes until the potatoes are cooked through. Reduce heat to low and stir in the grated cheese slowly until it melts completely and coats the beef and potatoes in a creamy sauce. Finish by stirring through the fresh coriander and adjust seasoning to taste. Serve hot as a main course with red rice.
