Grilled halloumi with vegetables

Method

Heat a griddle or barbecue to medium-high heat. Slice the halloumi into 1cm thick slices, then cut the courgettes lengthways into 5mm strips, halve the peppers and remove seeds, and cut the onions into thick rings. Combine the olive oil, lemon juice, oregano, garlic, salt and pepper in a bowl, then toss all the vegetables in this dressing. Grill the vegetables for 3-4 minutes per side until tender and charred, then arrange on a serving plate. Grill the halloumi slices for 2-3 minutes per side until golden brown and beginning to soften. Serve the grilled halloumi warm alongside the vegetables, scattered with fresh mint leaves.
