Method

Sift together the flour, sugar, baking powder and salt in a large bowl. In a separate bowl, whisk the eggs with the milk, melted butter and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and fold gently until just combined; do not overmix as a few lumps are desirable for texture. Preheat your waffle iron until it is hot and well-oiled, then spoon in enough batter to fill two-thirds of the iron. Close the lid and cook for 4-5 minutes until the waffle is golden brown and crispy on the outside. Repeat with the remaining batter. Serve the waffles immediately, dusted with icing sugar and topped with fresh berries, whipped cream or maple syrup as desired.
