Heat olive oil in a large heavy pot and brown the diced beef in batches until golden, then remove and set aside. Toast the dried chillies briefly in the pot, then add diced onions and garlic, cooking until softened. Return the beef to the pot and add the stock, bringing to a simmer, then cover and cook for 45 minutes until the meat is tender. Add potatoes, pumpkin, corn, and cumin, then simmer for 20-25 minutes until all vegetables are completely tender and the stew has thickened slightly. Season with salt and pepper to taste, and serve piping hot garnished with fresh coriander.
