Chicken Milanese with Rocket

Method

Place chicken breasts between cling film and gently pound to an even 1cm thickness using a meat mallet. Set up three shallow bowls with flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third. Coat each chicken breast in flour, shaking off excess, then dip in egg, and finally coat thoroughly in breadcrumbs. Heat vegetable oil in a large frying pan over medium-high heat and fry the chicken for 3-4 minutes each side until golden and cooked through. Drain on kitchen paper and serve immediately on a bed of fresh rocket dressed with olive oil, lemon juice, and shaved Parmesan.
