Make the galuska dough by whisking eggs with milk, salt, and flour until smooth, then rest for 15 minutes. Boil salted water in a large pot and press the dough through a colander into the water to form small noodle-like pieces, cooking until they float then for 2 minutes more before draining. Toast ground walnuts in a dry pan for 2 minutes, then set aside separately from the cocoa powder. Layer the cooked galuska in a serving dish with walnuts and cocoa, sprinkling caster sugar between layers. To make the sauce, heat milk with sugar, then whisk egg yolks with a little warm milk before tempering and stirring back into the pot, adding vanilla and cooking gently without boiling until slightly thickened. Pour the warm custard sauce over the galuska immediately before serving.
