Slice the tomatoes into thick rounds of about 1 cm thickness and arrange on a serving plate. Tear or slice the fresh mozzarella and distribute evenly over the tomato slices. Tear the fresh basil leaves roughly and scatter over the top. Drizzle generously with extra virgin olive oil, then add a few drops of balsamic vinegar. Season with sea salt and freshly ground black pepper to taste, and serve immediately at room temperature.
