Soak the dried kidney beans overnight, then drain and rinse thoroughly. Heat the oil in a large pot and sauté the finely diced onions, carrots, and celery until softened, about 5 minutes. Add the minced garlic and tomato paste, stirring constantly for 2 minutes until fragrant. Pour in the stock and water, add the prepared beans, bay leaves, paprika, salt and pepper, then bring to a boil. Reduce heat and simmer for 1.5 to 2 hours until the beans are completely tender, stirring occasionally. Taste and adjust seasoning as needed before serving hot.
