Rinse the yellow split peas thoroughly under cold water and drain well. Heat half the olive oil in a large saucepan over medium heat and sauté the chopped onion until softened and translucent, about 5 minutes. Add the split peas and water, bring to a boil, then reduce heat and simmer for 45-50 minutes, stirring occasionally, until the peas completely break down into a thick puree. Pass through a fine sieve or blend with an immersion blender until completely smooth, adding the remaining olive oil gradually as you blend. Season with sea salt, black pepper and lemon juice to taste, adjusting consistency with hot water if needed. Serve warm or at room temperature, drizzled with excellent quality olive oil and topped with sliced red onion and capers if desired.
