Mix flour, water and salt to form a soft, sticky dough and knead for 10 minutes until smooth. Divide into 8 balls, brush generously with olive oil and let rest for 30 minutes. On an oiled surface, stretch each ball into a thin, transparent sheet. Fold the sheet accordion-style into a compact rectangle, then coil it tightly and press flat to create a pastry disc. Fry each nwasser in hot olive oil for 3-4 minutes per side until deep golden and crispy. Drain on kitchen paper, then immediately drizzle with warm honey mixed with cinnamon and scatter sesame seeds and chopped pistachios over the top. Serve warm.
