Mix flour, salt and yeast in a large bowl. Add warm water and olive oil, combining until a shaggy dough forms. Knead for 10 minutes until smooth and elastic, then place in an oiled bowl, cover and leave to rise for 1 hour until doubled. Divide dough into 8 equal pieces and shape each into a flat oval, about 1 cm thick. Place on a baking tray lined with baking parchment, cover loosely and prove for 30 minutes. Brush each ftou with water, sprinkle with sesame seeds and bake at 220°C for 15-18 minutes until golden brown and hollow-sounding when tapped. Cool on a wire rack before serving.
