Method

Wash the citrus fruit thoroughly and cut into thin slices or segments, removing any pips. Place the fruit in a large heavy-bottomed pan with the water, cloves, and cinnamon stick, then bring to a boil and simmer gently for 45 minutes until the fruit is very soft and translucent. Dissolve the sugar in the liquid over low heat, stirring continuously, then add the lemon juice and increase the heat to achieve a rolling boil. Continue boiling for 30-40 minutes, skimming any foam from the surface, until the mixture reaches setting point (104-105°C on a sugar thermometer). Pour the hot spoon sweets into sterilised glass jars and seal immediately whilst still hot. Allow to cool completely before storing; serve a spoonful with cold water or coffee as a traditional Cypriot hospitality treat.
