Mix flour, salt, yeast and sugar in a large bowl, then add warm water and oil, combining until a soft dough forms. Knead for 10 minutes until smooth and elastic, then cover and prove for 1 hour until doubled in size. Divide dough into 12 equal pieces and roll each into a ball, then stretch into a ring shape approximately 10cm in diameter with a hole in the centre. Place rings on a floured baking sheet and prove for 30 minutes. Bring a large pot of water to the boil and poach each obwarzanek for 1-2 minutes until it floats, then remove with a slotted spoon. Mix sesame and poppy seeds together on a plate, then immediately coat each warm ring in the seed mixture, pressing gently. Arrange on a baking tray and bake at 200°C for 20-25 minutes until golden brown and the seeds are lightly toasted.
