Method

Bring the milk and water to the boil in a large saucepan with butter, salt, pepper and turmeric. In a separate bowl, mix the cornmeal with 150ml cold water to form a smooth paste. Slowly pour the cornmeal mixture into the boiling liquid whilst stirring constantly to prevent lumps. Add the chopped okra and continue stirring. Reduce the heat to low and stir frequently for 15-20 minutes until the mixture is thick, creamy and pulls away from the sides of the pan. The cou-cou should have a smooth, pudding-like consistency. Serve hot as an accompaniment to fish, stewed meats or curried vegetables.
