Mix the cornmeal, salt and warm water together in a large bowl, stirring until a soft dough forms that holds together but is not sticky; let it rest for 5 minutes. Divide the dough into 8 equal portions and roll each into a ball, then flatten between your palms to a disc approximately 1cm thick and 10cm across. Heat the oil in a heavy frying pan over medium-high heat until it reaches 180°C, then carefully place 2-3 arepas into the oil and fry for 4-5 minutes until golden brown on one side. Flip the arepas and fry for another 4-5 minutes until the second side is golden and they sound hollow when tapped. Remove with a slotted spoon and drain on kitchen paper. Serve warm, traditionally split and filled with shredded chicken, beef, cheese, avocado or beans.
