Method

Press the tofu between paper towels with a weight on top for 30 minutes to remove excess moisture. Cut the pressed tofu into cubes approximately 2 centimetres on each side. In a shallow bowl, combine salt, turmeric powder, minced garlic, grated ginger, and chilli powder to form a paste. Heat the groundnut oil in a deep pan or wok to 180 degrees Celsius until a cube of bread browns in 30 seconds. Coat the tofu cubes lightly with the spice mixture, then carefully add them to the hot oil in batches, frying for 3-4 minutes until golden and crispy on all sides. Remove with a slotted spoon and drain on paper towels. Serve hot as a side dish, often alongside rice or with a dipping sauce of lime juice and salt.
