Toast the wholemeal bread to medium-golden brown; this should take 2–3 minutes depending on your toaster's heat. You're aiming for caramelisation of the surface sugars to give the bread structure and flavour, not burnt edges. Once done, set aside on a plate.
While the bread toasts, slice the banana into rounds roughly 5 mm thick. Spoon the cottage cheese directly onto each warm slice of toast, spreading it gently across the surface with the back of a spoon; the residual heat will warm the cheese slightly without breaking it down. Layer the banana slices on top, pressing them lightly so they hold.
Finish with a light pinch of cinnamon over each slice. The warmth from the toast will open up the spice's aromatics. Eat straight away, while the toast still has some give at the edges but the surface remains firm enough to support the toppings without collapsing.
