Peel and chop the potatoes into even-sized chunks, then boil in salted water for 15-20 minutes until tender. Meanwhile, heat the oil in a large frying pan and fry the sausages over medium heat for 15-18 minutes, turning occasionally until golden and cooked through. Slice the onions and fry them in the same pan with the sausages for the final 5 minutes. Drain the cooked potatoes and mash with butter and milk until smooth and creamy, seasoning with salt and pepper. Sprinkle flour over the sausages and onions, stir well, then add the beef stock and simmer for 2-3 minutes to create a rich gravy. Divide the mash between serving plates, top with the Cumberland sausages and onion gravy, and serve immediately.
