Rinse all dried fruits thoroughly under cold water to remove any dust. Bring the water to a boil in a large pot, then add the dried apples, pears, plums, cherries, raisins, and rosehip. Add the cloves and cinnamon stick, then reduce heat and simmer gently for 25-30 minutes until the fruits are tender and the liquid is infused with colour and flavour. Stir in the caster sugar and simmer for a further 5 minutes until dissolved. Remove from heat and let cool to room temperature, then strain through a fine sieve into a clean container, pressing gently on the fruit to extract all liquid. Serve chilled or at room temperature as a traditional festive drink.
