Preheat the oven to 200°C and lightly flour a baking tray. In a large bowl, combine the wholemeal flour, white flour, salt, and bicarbonate of soda, mixing thoroughly. Make a well in the centre and pour in the buttermilk and honey, stirring gently with a wooden spoon until a soft, slightly sticky dough forms. Turn the dough onto a floured surface and knead lightly for a few seconds until just combined, then shape into a round loaf. Place on the prepared tray, cut a deep cross into the top with a sharp knife, and bake for 40-45 minutes until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack before serving warm with butter.
