Mix the wholemeal flour, plain flour, baking soda and salt together in a large bowl. Rub in the butter until the mixture resembles breadcrumbs. Make a well in the centre and gradually pour in the buttermilk, stirring with a wooden spoon until a soft dough forms. Turn the dough onto a lightly floured surface and gently knead until just combined, being careful not to overwork it. Divide the dough in half and shape each piece into a round about 1cm thick, then cut into four wedges like a cake. Heat a cast iron griddle or heavy-bottomed frying pan over medium heat, lightly grease with butter, and cook the farls for about 4-5 minutes on each side until golden brown and cooked through.
