Cook the rice noodles in boiling salted water until just tender, drain and set aside. In a large pot, heat oil and fry shallots and garlic until fragrant, then add turmeric and cook for 30 seconds. Add the pork and stir-fry until just cooked through, then add the stock and bring to a simmer. Add the prawns, fish sauce, and mustard greens, simmering for 3-4 minutes until the prawns are cooked. Season with salt and white pepper to taste. Divide the cooked noodles among four bowls, pour the hot broth and ingredients over them, then garnish generously with crushed peanuts, spring onions, and serve with lime wedges on the side.
