Mix softened cream cheese with minced garlic, salt and pepper. Wilt the spinach gently in a pan with olive oil, then chop finely and fold into the cream cheese mixture. Lay out turkey slices and spread a thin layer of the cream cheese mixture onto each slice, then add a slice of cheddar and a few pieces of sun-dried tomato. Roll tightly and secure with a cocktail stick if needed. Pan-fry seam-side down for 2-3 minutes per side until golden and the cheese begins to melt, or bake at 180°C for 12-15 minutes until heated through.
