Method

Soak the salted cod in cold water for 24-48 hours, changing the water every 8-12 hours to remove excess salt. Peel and cut potatoes into even chunks. Place the soaked cod in a large pot with fresh water, add halved onion, bay leaves, and peppercorns, then bring to a gentle simmer for 15-20 minutes until the fish flakes easily. In a separate pot, boil the potatoes with salt until tender, about 15-20 minutes. Drain the cod gently and arrange on a warm plate with the drained potatoes. Top with a knob of butter and serve immediately with mustard on the side, accompanied by rye bread if desired.
