Method

Mix flour and salt in a bowl, then gradually add warm water whilst kneading to form a soft, elastic dough. Knead for 10 minutes until smooth, then cover and leave to rest for 30 minutes. Divide the dough into 8 equal balls and flatten each into a thin circle about 3mm thick. Heat vegetable oil in a deep frying pan to 180°C and carefully slide each circle into the hot oil, frying for 2-3 minutes per side until golden and puffy. Remove with a slotted spoon and drain on kitchen paper. Stack the warm fricasse on a serving plate and drizzle generously with runny honey, then serve immediately whilst still warm and crispy.
