Combine minced garlic, shallots, galangal, lemongrass, turmeric, fish sauce and palm sugar into a paste. Mix this paste with the ground peanuts and coconut milk to create a marinade. Thread pork slices onto soaked bamboo skewers, accordion-style, then coat thoroughly with the peanut marinade, reserving some for serving. Heat oil in a large frying pan or griddle over medium-high heat and grill the satay skewers for 3-4 minutes per side until cooked through and lightly charred. Serve hot with the remaining peanut sauce for dipping, accompanied by fresh cucumber slices and pickled vegetables.
