Method

Combine the cornmeal, flour, baking powder, salt and sugar in a large bowl. In a separate bowl, whisk together the milk and eggs until well combined. Pour the wet ingredients into the dry ingredients and stir until you have a smooth, thick batter with a consistency similar to porridge. Heat the vegetable oil in a deep frying pan or skillet to 180°C and carefully drop spoonfuls of batter into the hot oil, frying in batches to avoid overcrowding. Fry for approximately 3-4 minutes on each side until the johnny cakes are deep golden brown and cooked through. Drain on kitchen paper and serve whilst still warm, traditionally accompanied by fried fish, avocado or a spicy sauce.
