Method

Brew strong black tea using loose leaf Darjeeling or similar quality tea, steeping for about 5 minutes. Pour the hot tea into a traditional churn or tall blender jug. Add the unsalted butter, yak butter, salt and milk to the hot tea. Churn or blend vigorously for 2-3 minutes until the mixture is frothy and well emulsified, creating a creamy consistency. Pour into traditional bowls and serve immediately whilst still hot and foamy. Butter tea is traditionally sipped throughout the day, often accompanied by tsampa or other foods.
