Cut the cheese into sticks approximately 8cm long and 1cm thick, then chill for at least 30 minutes. Whisk together eggs and milk, then combine with flour, baking powder and salt to form a smooth batter. Heat oil to 180°C in a deep heavy-bottomed pan. Dip each cheese stick into the batter to coat completely, then carefully lower into the hot oil using two forks. Fry for 2-3 minutes until golden brown on all sides, turning once. Remove with a slotted spoon and drain on kitchen paper. Serve immediately whilst the cheese is still molten inside, traditionally with a hot tomato-based dipping sauce.
