Peel and chop the potatoes into chunks, then boil in salted water for 15-20 minutes until tender. Meanwhile, heat the oil in a large pan and fry the diced onions until softened. Add the beef mince, breaking it up with a wooden spoon, and cook over a moderate heat until browned, about 5-7 minutes. Stir in the tomato puree and Worcestershire sauce, then add the stock and bring to a simmer for 10 minutes, seasoning with salt and pepper to taste. Drain the cooked potatoes and mash them with the butter and milk until smooth and creamy. Serve the mince in bowls alongside a generous portion of mashed potatoes, allowing the gravy to soak into the tatties.
