Peel the potatoes and cut them into even-sized chunks of about 5 cm. Place them in a large saucepan of cold salted water and bring to the boil, then simmer for 15-20 minutes until completely tender and a fork passes through easily. Drain thoroughly in a colander and return to the pan. Add the butter and mash with a potato masher until smooth, working quickly whilst the potatoes are still hot. Gradually add the warm milk, stirring gently with a wooden spoon until you reach your desired consistency. Season to taste with salt and white pepper, then serve immediately.
