Make a dough by mixing flour, salt, egg and water until soft, then rest for 30 minutes. Brown the diced meat with chopped onions in butter until well coloured, season with pepper and set aside. Roll the dough very thin and cut into small squares or rectangles. Bring stock to a boil and add the meat mixture, then gently drop in dough pieces one at a time, stirring occasionally to prevent sticking. Simmer for 15-20 minutes until the dough is cooked through and the broth has thickened slightly. Finish with fresh herbs and serve hot in bowls with the broth.
