Method

Cut the mozzarella into 8 equal slices approximately 1cm thick. Place one slice of mozzarella between two bread slices, pressing gently so they adhere, optionally tucking an anchovy fillet into the cheese. Trim the sandwich edges if needed to create neat rectangles. Beat the eggs with milk, salt and pepper in a shallow bowl, then place the flour in another shallow bowl. Dip each sandwich into the egg mixture, ensuring both sides are well coated, then dredge in flour, shaking off excess. Heat the oil to 180°C in a deep heavy-bottomed pan or deep fryer. Carefully fry the sandwiches 2-3 at a time for 2-3 minutes until golden brown on both sides, turning once. Drain on kitchen paper and serve immediately while the cheese is still molten inside.
