Method

Combine the ground lamb, finely chopped onions, fresh coriander and parsley in a large mixing bowl. Add the cumin, ground coriander, paprika, salt and pepper, then crack in the egg and mix thoroughly until well combined and the mixture holds together. Divide the mixture into 8 portions and mould each into an elongated cylindrical shape around flat metal skewers. Heat the oil in a large heavy-bottomed frying pan or griddle over medium-high heat until shimmering. Carefully place the kebabs in the hot pan and cook for 12-15 minutes, turning frequently to ensure even browning on all sides. The kebabs should be golden brown and cooked through with no pink remaining inside. Serve immediately whilst hot, typically accompanied by flatbread, sliced onions, tomatoes and yoghurt.
