Heat 1 tablespoon of oil in a wok or large frying pan over high heat and scramble the eggs, then set aside. Add remaining oil and fry the shallots, garlic and chillies until fragrant, approximately 1 minute. Add the diced chicken and fry until cooked through, about 5 minutes, then add the prawns and cook for 2 minutes. Add the cooled rice, breaking up any clumps, and stir-fry continuously for 3-4 minutes until heated through and separated. Pour in the soy sauce, oyster sauce and ketchup, tossing everything together well, then add the carrots and peas and cook for another 2 minutes. Fold in the reserved scrambled egg and spring onions, season with salt and white pepper, and serve immediately with fresh lime wedges on the side.
