Sift together the flour, sugar, baking powder and salt into a mixing bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Whisk the egg and buttermilk together, then stir into the dry ingredients until you have a smooth, thick batter. Heat a griddle or heavy-bottomed frying pan over medium heat and lightly grease it. Drop spoonfuls of batter onto the hot griddle, spacing them well apart, and cook for 2-3 minutes until the underside is golden and small bubbles appear on the surface. Flip gently and cook the other side for another 1-2 minutes until light golden. Serve warm with butter and jam or honey.
