Heat oil in a large pot and fry the cubed meat until browned on all sides, approximately 5 minutes. Add diced onions, garlic, and ginger, cooking for 2-3 minutes until fragrant. Pour in the beef stock and add the dried chillies, turmeric, and coriander powder, then bring to a boil. Add the soaked and sliced mushrooms, reduce heat, and simmer for 45 minutes until the meat is tender. Add the egg noodles directly to the pot and cook for 8-10 minutes until al dente. Season with salt and black pepper to taste, then serve hot garnished with fresh spring onions and coriander.
