Crumble the feta cheese into a bowl and mix with finely chopped parsley, dill, beaten egg, salt and pepper to form the filling. Lay out a filo sheet and brush generously with oil, then fold it in half lengthways. Place a spoonful of filling at one end and fold the pastry over to create a triangle, continuing to fold along the length until sealed. Heat oil in a deep pan to 170°C and carefully deep-fry the boregi triangles until golden brown on both sides, about 2-3 minutes total. Drain on kitchen paper and serve hot, traditionally with a yoghurt and garlic sauce on the side.
