Method

Mix the beef with half the soy sauce and cornflour, and set aside for 15 minutes. Heat a wok or large frying pan over high heat with oil, then stir-fry the beef in batches until browned, removing to a plate. Rinse the black beans, then stir-fry them with the garlic and ginger for 1 minute. Return the beef to the pan and add the remaining soy sauce, oyster sauce, vinegar, sugar and water, then simmer for 3-4 minutes until the sauce thickens. Garnish with spring onions and chilli, and serve immediately with steamed rice.
