Method

Preheat oven to 180°C and grease a 23cm round cake tin. In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt. In another bowl, beat eggs with milk and melted butter until combined. Fold the wet ingredients into the dry mixture until just incorporated, then gently stir in sweetcorn and cheese pieces. Pour batter into prepared tin and bake for 35-40 minutes until a skewer inserted in the centre comes out clean and the top is golden brown. Allow to cool in the tin for 10 minutes before turning out onto a wire rack. Serve warm with butter or fresh cheese.
