Boil the potatoes, beetroot, and carrots in separate pans until tender, then peel and dice them into small cubes. Hard boil the eggs and chop them finely. Finely dice the onion and soak it briefly in cold water to soften its bite. Layer a rectangular dish starting with the diced herring, then add a layer of diced potato mixed with onion, followed by a layer of diced carrot, then chopped egg, and finally a thick layer of diced beetroot. Spread mayonnaise over each layer and between them, ensuring good coverage. Top the final beetroot layer with a generous coating of mayonnaise to seal it completely. Refrigerate for at least 4 hours or overnight, then garnish with fresh dill before serving.
