Method

Finely chop the prawns and mix with egg white, cornflour, soy sauce, sesame oil, salt and white pepper until well combined. Spread the prawn mixture evenly onto each bread slice, then press sesame seeds onto the top until well coated. Heat the vegetable oil in a deep pan to 180°C and carefully fry the toast prawn-side down for 2-3 minutes until golden and crispy, then flip and fry the bread side for 1 minute. Remove with a slotted spoon and drain on kitchen paper, then serve hot, optionally with sweet chilli sauce or soy sauce for dipping.
