Method

Sift the flour, salt and bicarbonate of soda into a large mixing bowl. Make a well in the centre and gradually add the buttermilk, mixing with your fingers until you form a soft, slightly sticky dough. Turn the dough onto a lightly floured work surface and knead gently for just a minute until it comes together. Divide the dough in half and pat each piece into a thin round about 5mm thick, then cut each round into quarters to make four farls per piece. Heat a cast iron griddle or heavy frying pan over a medium heat until hot, then cook the farls for 3-4 minutes per side until golden brown and cooked through.
