Peel and cube the potatoes into roughly 2cm pieces, then slice the onions thinly. Heat the olive oil in a large heavy-bottomed pot over medium heat and add the sliced onions, cooking gently for about 5 minutes until softened and golden. Stir in the smoked paprika and cook for 1 minute to release its flavour, then add the cubed potatoes, salt, pepper, bay leaves and water. Bring to a simmer and cook uncovered for 25-30 minutes, stirring occasionally, until the potatoes are very tender and the liquid has reduced to create a thick, stew-like consistency. The dish should be creamy from the breakdown of the potatoes rather than from any added dairy. Adjust seasoning to taste and serve hot as a warming, rustic main course.
