Method

Wash the spinach thoroughly and remove any tough stems. Slice the garlic thinly. Heat the olive oil in a large frying pan over medium heat and add the sliced garlic with a pinch of chilli flakes, stirring gently for about one minute until fragrant but not browned. Add the spinach in batches, stirring constantly with a wooden spoon, allowing each batch to wilt before adding more. Once all the spinach is wilted and any excess moisture has evaporated, season generously with sea salt and freshly ground black pepper. Serve immediately whilst still warm as an accompaniment to meat or fish dishes.
