Method

Heat the honey and butter together until melted, then stir in the brown sugar and allow to cool slightly. Beat in the eggs one at a time, then fold in the ground almonds, candied orange peel, and all spices mixed together with the flour, baking powder, bicarbonate of soda and salt. Divide the mixture between two lined 20cm square baking tins and bake at 180°C for 25-30 minutes until golden and a skewer comes out clean. Cool in the tins for 10 minutes, then turn out onto wire racks. Once completely cool, make the icing by whisking together icing sugar, egg white and lemon juice until smooth and glossy, then spread generously over the cooled cakes. Cut into squares and allow the icing to set before serving.
