Method

Cook the macaroni in salted boiling water until al dente, then drain and set aside. In a large saucepan, melt the butter over medium heat, add the diced onion and soften for two minutes, then sprinkle over the flour and stir continuously for one minute to make a roux. Gradually add the milk, stirring constantly to avoid lumps, then cook for five minutes until the sauce thickens. Remove from heat and stir in 200g of the grated cheese, the eggs, salt, pepper, nutmeg and mustard powder until well combined. Fold in the cooked macaroni and pour the mixture into a buttered baking dish. Mix the remaining cheese with the breadcrumbs and sprinkle over the top. Bake at 190C for thirty-five to forty minutes until golden brown and set in the centre.
