Method

Rinse the rice under cold water and place in a large saucepan with the milk, cinnamon stick, lemon zest and salt. Bring to a simmer over medium heat, stirring frequently to prevent sticking. Cook for approximately 20-25 minutes, stirring regularly, until the rice is tender and the milk is almost completely absorbed. Remove from heat, discard the cinnamon stick and lemon zest, then stir in the butter and caster sugar until fully dissolved and the mixture is creamy. Divide into serving bowls whilst still warm and dust generously with ground cinnamon in a decorative pattern.
