Pour hot strong tea over the dried mixed fruit and sugar, then leave overnight to soak. Preheat the oven to 160°C and grease a loaf tin. Mix the flour, baking powder and salt together, then stir in the soaked fruit mixture along with the beaten egg, honey and vanilla extract until well combined. Pour into the prepared tin and bake for 1 hour 15 minutes until a skewer inserted in the centre comes out clean. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely. Traditionally serve sliced and buttered.
